The aim of the research is scientific study and development of a wide range of foodstuffs with processed hydrocoles of the Black Sea used for medical and preventive purposes. Research methods and apparatus: organoleptic, physicochemical, microbiological, clinical and laboratorial, methods of system analysis, experiment planning and mathematical treatment of experimental data using modern computer programmes. The scientific novelty is in theoretical study and experimental acknowledgement of practicability of using "Rapamid" dietary mollusc additive in baked goods and emulsion products' technologies; scientific study of technologies of producing goods made of processed hydrocoles of the Black Sea; clinical tests confirming radioprotective properties and positive influence of "Rapamid" dietary additive and baked goods containing it on the clinical state. The effectiveness of the introduction consists in developing assortment of popular foodstuffs used for medical and preventive purposes, the introduction of which enables us to get profit and to improve the health of Ukrainian population.
