The research objective - the creation of scientific bases of functional food emulsions technology with the addition of diacylglycerols, structured lipids and fatty acid ethyl esters, that give to the specified fat products dietary and treatment-and-prophylactic properties. Research techniques - chemical, physicochemical, microbiological, biochemical. Theoretical and practical results: the conversion of lipids using biocatalysts was studied and the conditions of their use for the production of biologically active components - structured lipids, diacylglycerols and fatty acids ethyl esters - were determined. The influence of these components on the rheological characteristics of functional fat emulsions on their basis, their resistance to oxidation and biochemical processes during storage were investigated. In addition the specific features of the formation of the amorphous-crystalline structure of these fat systems were ascertained. The establishment of the basic principles of biocatalytic lipids modification in order to obtain functional fatty compounds, and the impact of the latter on the properties of the food systems on their basis in the sequel enables to proceed to the industrial use of enzymes for the functional fats production.
