The object of study is modern processing oil technologies to produce natural flavour carriers of world-class quality. The subject of the study is separation and selection methods for optically active isomers of essential oils and relating them to the (+) or (-)-form of the activity with the specification of flavour and uses. The novelty of the work is entirely new approaches to the separation and selection for optically active isomers of essential oils. The sequential combination of the three technological decisions such as vacuum rectification, preparative chromatography and gas chromatography control of optical isomer "purity" have been proposed first time. The theoretical and practical approaches to the preparative separation for essential oil optical isomers in a "pure" form have been developed. The application of optically active D-mannitol stationary phase for direct analysis of optical isomers in the essential oils and their identification has been proved. Research methods are gas chromatography (analytical, preparative, solid phase), polarimetry for the optical activity definition of essential oil isomers, sensory analysis for the organoleptic characteristics of essential oil "narrow" fractions and optical isomers.
