Research objective - definition of biologically active substances (a chlorophyll, carotenoid , low-molecular phenolic connections (on routine), high-molecular polyphenolic connections (on tannin), L-ascorbic acid, iodine) in various samples of salad of Indau which have been grown up on different technologies. Methods of researches - Biologically active substances defined on following indicators: a chlorophyll and and b, carotenoids, L - ascorbic acid, low-molecular phenolic connections (on routine), polyphenols, iodine. Used chemical methods of researches - spectroscopic, titirimetric, physical and chemical which have entered in corresponding GOSTs (which list of methods are applied on the report). The basic part. In the present work it is shown that salad production of Indau new to Ukraine sowing differs high maintenance Biologically active substances, in particular a chlorophyll and and b (from 500 - 775 mg in 100), carotenoids (from 3,1 mg in 100 g to 8,7 mg in 100), L - ascorbic acid (from 82 mg in 100 г to 129,2 mg in 100), low-molecular phenolic connections (on routine) (750-950 mg in 100), polyphenolic connections (on tannin) (330 - 350 мg in 100). It is shown also that in salads of Indau contains about 0,08 mg of iodine that under the formula of the rational and balanced food makes about daily requirement of the person for iodine (the daily requirement makes 0,1 - 0,2 mg). It is necessary to underline that in the presented samples of salads contains nearby 1 - 1,5 daily requirements of the person for ascorbic acid (under modern requirements the daily requirement makes 70-100 mg), and also in carotin - from 2/3 to 1,5 daily requirements of the person. Results themes - examination is spent and biologically active substances (a chlorophyll and and b are estimated, phenolic connections, carotenoids , tannic - polyphenolic substances, low-molecular phenolic substances (on routine), L - ascorbic acid) in salad production new to Ukraine (8 versions), grown up on new technologies and are defined possibilities of its cultivation in Ukraine and uses in an improving food.
