The improved methodology for identification of bovine casein fractions according to the international classification of caseins, were proposed. The protocol for gentle casein fractionation resulting in preserving the natural composition and structure was developed. This protocol does not include extreme physical and chemical conditions such as strong acidic or alkali pH ranges or high temperatures. The biological activity of peptide fractions produced from caseins by lactic acid bacteria enzymes and milk-clotting preparations in fermented dairy products was detected. The high yield model proteolytic system to obtain low molecular proteolytic casein products was obtained. Casokinin-like activity in prepared alfaS1-CN and beta-CN fractions obtained in above-mentioned model was shown. The field is functional products.
