The object of research - bionanotechnologies for extending the shelf life and improve the quality and safety of food. The purpose of the study - a scientific substantiation of effective ways and means to ensure a high level of quality and safety of meat and meat products, on the basis of comprehensive fundamental research to innovative bionanotechnology in meat processing enterprises of Ukraine.
