Methods: organoleptic and physico - chemical parameters of oilseeds and oil samples determined by standard methods; fractional composition of seed proteins and oil composition acylglycerols determined by the techniques developed VNIIZH (Saint - Petersburg) and UkrNIIMZh UAAN ( Kharkov); fatty - acid composition and structure acylglycerols oils determined by gas chromatography; indicators of quality bakery products are defined according to DSTU 7045-2009, for the planning of experiments and analysis of experimental data using mathematical methods using a software package MathCad and Microsoft Excel. Theoretical and practical results, novelty: first defined physico - chemical characteristics of saturated seed type and composition acylglycerols oil obtained from it, and also established the presence of oil disaturated - monounsaturated fraction acylglycerols. Defined rational fractionation conditions sunflower oil saturated type and proven ability to create effective technology specialty fats containing no industrial trans fatty acids. Revealed the possibility of using sunflower oil fractions of palmitic type in bakery products. A draft technical specifications for a new kind of product - sunflower palmitin. Effectiveness of implementation: the new technology opens the way to improve the profitability of enterprises, since it will receive valuable food from domestic raw materials and reduce the country's dependence on imports.
