The purpose of the work to obtain solubilized oil-dissolved substances by gelatin solutions and to use this systems in technologies of emulsions and gels food. Expedience of the use solubilization in food technologies was proved. Possible directions of improvement of technologies of gels dessert food by using including of oil-dissolved vitamins were determined. Solubilization of sunflower-seed oil, of sunflower-seed oil with -karyotin, of fish fat by gelatin solutions was investigated. Influence of fish fat on intermolecular structure gelatin in solution was determined. Dry gelatin with solubilized oil and dry gelatin with solubilized oil with -karyotin was obtained. Organoleptic and physical-chemical properties of obtained after drying gelatin with solubilized sunflower-seed oil were studied. The swelling kinetics of gelatin with solubilized sunflower-seed oil for T=298 K and T=313 К was investigated. Speed constants and heating of swelling were calculated. It was determined that speed of swelling increases for gelatin with solubilized sunflower-seed oil. It was observed that maximum degree of swelling independents of рН for gelatin with solubilized sunflower-seed oil. Recipes of gels and marshmelloy on the basis of gelatin with solubilized sunflower-seed oil were worked out. The results of investigation inculcated in study process and manufacture.
