Objective - development of resource-saving cleaning process onion and its hardware design . The subject of this study is to onions to be cleaned . Is a literature review of equipment for the implementation of treatment processes that are used in the food industry . The result of the literature review was conducted , identifying some of the shortcomings of existing methods , machines and devices for cleaning of onion . Established promising areas intensification cleaning process that can be solved by improving existing and developing new ways to clean onions . Consequently, the identified areas of experimental studies to determine the most efficient ways to clean roots , in particular, it was identified the effects of steam on the surface layer of onion combined with the purification process . To implement the proposed method for purification of onions were invited to design an apparatus for cleaning onion AСR - 10 /60. The basis of the method developed purification onion and apparatus proposed structure laid combined purification process that consists of short-term treatment with steam in order to reduce the dry peel forces due to the main portion with increased coefficient of friction and subsequent treatment in a drum chamber. Using the proposed design of the apparatus designed for the food industry and restaurant facilities will improve the quality of treatment of onion intensify processes of its processing, saving material resources in the manufacture of the device and reduce its energy consumption , improve the working conditions of staff.
