Modern methods used for the assessment of the products of vegetable origin are analyzed and their disadvantages are identified. The techniques and parameters of a new method of vegetable raw material samples preparation to the merchandising analysis are developed. Its main peculiarities are plasma reception that is characterized by phasic regression concerning the operations of freezing-defrosting. The differences in electro-physical, cryoscopic, thermodynamic and optical properties of plasmas from tomatoes and sweet pepper grown under different conditions are studied. The consumer properties of the received vegetable plasmas and husks are studied, their changes in the process of refrigeration are tracked up. Functional-technological properties of the frozen semi-finished products are determined, and the ways of their further use, namely, vegetable husks as sauces for the frozen bases for pizza, vegetable plasmas as a basis for the manufacture of the frozen semi-finished product for tomato juices and vegetable ice-cream "Frozen ice" with the aim of forming consumer properties of these food products are identified.. The improved methods of the merchandising assessment of tomatoes and products of their processing in the enterprises and in Kharkiv laboratory are developed and introduced. Economic and social effects from practical introduction of the researched methods of the merchandising assessment of fresh vegetables are calculated.
