The purpose of the task - a comparative analysis of factors of anthropogenic contamination of soil and forage resources defined region in the trophic chain "soil - plant-animal - Products - man" and give suggestions to improve the quality of dairy products. Methods: Synthesis, analysis - a review of the literature, summarizing the results; forwarding - Exploring the causes of deterioration or improvement in product quality (sampling soil, feed and milk for chemical analysis); Laboratory - determination of the chemical composition of the soil, water, feed, milk. The study was conducted in 6 households that vary the level of intensity of production and agro-ecological zone location within the Ternopil region. The scientific novelty of this work is to study the quality of the ingredients of the food chain " soil - water - plant - animal ' and their impact on the quality and safety of milk to ensure people clean food. Implementation of development will provide economic benefits by stimulating the improvement of the quality of milk: extra for the brand - 25 % of the highest quality - 20%.
