Was executed the analysis of the rotational oscillation of water molecules, which is the main fluctuations in the liquid phase and lead to rotations around the axes of the protons of water hydrogen bonds. Materials research were presented in articles in professional journals and discussed at conferences. Method for the study of the moisture state in capillary - porous bodies, which is based on the use of EPR-spins marks was developed. This method enables to explore borders between the forms of connection of moisture. It is set by the method of EPR-spins marks, that an amount and conduct of moisture during drying of raw material depend on its molar concentration and molar mass. Set the limits of expedience of using Hahn method of research food products. That promotes exactness of determination T2 time . Investigation changes of the state of moisture in the mushrooms and certain expedient parameters of their thermal technological treatment. Developed the mathematical model for nature of water in food products and calculated coefficients of self-diffusion.
