The object of research -Large cattle, swine, beef, pork. Purpose. Analyze the international and national regulations concerning zoonoses; study the distribution and occurrence in Ukraine poisoning, toxemia, larvalnoho echinococcosis and sarkotsystozu animals by post-mortem veterinary-sanitary examination and toxoplasmosis - by zazhyttyevoyi diagnosis. To analyze and develop an effective system for monitoring biological risks in order to produce safe meat quality due to harvesting and long-term storage in conditions of Ukraine State Reserve. Research Methods - statistical, clinical, sensory, pathological, postmortem, parasitological, biochemical, immunological, bacteriological. Analysis of national and international regulations governing the monitoring and analysis of risks related to zoonoses. Global requirements for food safety in relation to zoonoses based on Regulations EC, and Ukrainian in instructions and guidelines, policies to combat a certain type of disease, etc.. Analysis of epizootic situation of disease of cattle and pigs for the period 1999-2013 biennium. Ukraine. Most prevalent disease among cattle is leykoz- 82.7%, and of zoonoses - TB - 3.7% and leptospirosis - 1.1%. Analyzed the incidence of animal echinococcosis, sarkotsystozom and studied organoleptic properties and fatty acid composition of bacon pigs echinococcosis. Established that with increasing degree of infestation carcasses of pigs larvalnym echinococcosis increased content of saturated fatty acids and polyunsaturated - decreases. In subcutaneous and intermuscular fat ratio of polyunsaturated to saturated fatty acids decreases with increasing intensity of infestation. Patients pigs to increased infestation increases the content of sulfur amino acids (methionine, cystine) content decreases valine, threonine and lysine, isoleucine increases - leucine. Value of essential amino acids to substitute for echinococcosis slightly decreases with increasing intensity of infestation. Scientific novelty of the research lies in the fact that for the first time analyzed and developed effective systems for monitoring biological risks in order to produce safe meat quality due to harvesting and long-term storage in conditions of Ukraine State Reserve .
