The work consists of an introduction, main body, conclusion, bibliography. The major part is represented in the form of three sections. The first section is devoted to setting goals and objectives of the study. In the second section, a comprehensive assessment of the level of environmental hazard wineries index-based hazard under normal and emergency operation of the enterprise. The analysis of the results of this assessment with a view to assigning the enterprise to one of the risk groups. The third section is devoted to the study of the chemical composition of pomace, combs, experimentally proved the choice of their method of disposal for the purpose of producing a feed additive for cattle. It is proved that the ridges and pomace contain high amounts of cellulose (38.2%) to be subjected to enzymatic hydrolysis in order to increase the nutritional value of the feed additive. Experimental set rational process parameters of the enzymatic hydrolysis of bagasse and ridges in which there is a maximum degree of hydrolysis of cellulose. The physicochemical properties of the enzyme preparation "Tsellyulad", defined by its activity. The fourth section investigated the chemical composition of the wastewater, which confirm the feasibility of choice by means of disposing of anaerobic digestion in the digester. Experimentally established rational parameters of anaerobic digestion of sewage, in which there is a maximum process stability. It is proved that the most suitable design of the bioreactor are UASB-reactors. The results of these studies show the high efficiency of wastewater treatment (90-92%) of the initial contamination, which is the experimental basis of previous theoretical studies.
