Study objective: to develop scientific-technological basis for safe and effective use of nanocarboxylates for the enrichment the foodstuffs with microelements. Study methods: mycological, chemical, physico-chemical, statistical. Study results: it was determined that Zn, Fe, Se, and Ge, produced by nanotechnology, especially Zn and Se were sorbed better from nutrient medium by the mycelium of the cultivated fungi then correspondent sulphates and intensified its growth (accumulation of biomass). Main regularities of these processes were studied and described mathematically. Optimum conditions for fungi mycelium cultivation were identified. It was demonstrated that Zn, Se, and Ge induced a synthetic activity of the mycelium of fungi G. lucidum and P. ostreatus, increasing a content of protein, fat, polysaccharides, and vitamins (C, B1, B2, B3, B6, A), and also increased a nutritional value of the protein of mycelium in both fungi and biological value of the mycelium of fungi G. lucidum, increasing a content of omega-3 and omega-6 fat acids in it. Comparative assessment of bioavailability of Zn, Fe, and Cu from the fungi mycelium biomass cultivated on the nutrient medium, enriched with nanocitrates, were performed on the experimental animals.
