Purpose - to study the possibility of using sonication to organize waste-free processing of food products. It were systematized information on the propagation of ultrasonic waves in foods of animal and vegetable origin, data on the use of ultrasonic treatment in the food industry in Ukraine and abroad. According to the results of analytical review revealed promising studies of the effect of ultrasonic treatment on objects such as cattle meat, ocean, river and pond fish, eggs and vegetable fats. The results of studies related to decontamination of raw meat, fish cleaning carcasses of scales and preliminary processing of fish before canning, preparing the emulsion sauces such as mayonnaise.
