Purpose of work – to find out dependence of intensity of synthesis of albuminous matters and biomass of producents on quality of nourishing environments and substrativ at proper producents of different taxonomical groups. Research methods – traditional and modern biochemical, physics – chemical, microbiological and technological. Studied optimization of composition of nourishing environments and cultivation of mycelia microorganisms of Pleurotus ostreatus, Blakeslea trispora, vermikul'tur Eisenia foetida. It is experimentally set that output of biomass at mycelia organisms higher on gluten (source of nitrogen) than on a soyamilk and on a corn extract in 1,3 and in 2,1 times accordingly. Biosynthetic activity of producents also higher on environments with gluten. It is found, that amino acid composition of biomass of Eisenia of foetida, adapted on the modified sunflower husk gets better. A general amount of albumen is 63,6 %, nitrous extract matters - 7 – 16 %. The amount of lipid in biomass rises to 10,5 – 17,5 %.
