They allow you to create a wide range of dishes and food of improving and therapeutic and prophylactic purposes for the elimination of the deficit of essential nutritional factors in diets of Ukrainians. On the basis of theoretical studies to determine the mineral deficiencies in the diet, way of its overcoming are installed. The requirements in terms of safety, the chemical composition and technological properties of the products of therapeutic and prophylactic purpose are studied. The relevance is scientifically proved. Methodological approaches to the modeling of the formulations of food and dishes with a wellness and therapeutic and prophylactic properties are developed. Based on theoretical models of experimental formulations, the food technology balanced to chemical composition are developed. The safety indices, chemical composition, functional and technological and microstructural characteristics of model food systems are studied and scientifically justified. The 6 utility model patents of Ukraine received. By clinical trials of improving characteristics of developed new products enriched with essential nutritional factors are proved. At the same time, the concept and the steps of creating food systems of therapeutic and prophylactic action are formulated. Methods for analyzing biological and nutritional value of food systems are proposed. The problems of balancing the composition of nutrients and ensuring their daily diets are studied. Technological aspects of the implementation of food systems are considered. Innovative approaches to the development of individual food systems for the prevention and treatment of diseases that occur in the background of deficiency of mineral substances are set out. Formulations for food systems of therapeutic and prophylactic action are designed.
