Contemporary directions of the development of thermal stable feeling are studied. The prospectivity of involving milk-vegetable raw material and hydrocolloids as well as the reasonability of low-temperature storage - refrigeration (freezing) is specified. The expediency of the elaboration - thermal stable milk-containing filling with sesame seeds concentrate possessing stable physical-chemical and structural-mechanical properties under the influence of high temperature - is proved with the account of analytical and experimental data. The urgency of combined application of hydrocolloids - citric low-etherified pectin, modified cornstarch and milk-vegetable raw material - dried nonfat milk and sesame seeds concentrate is substantiated. The ways for the maintenance of the elaborated product are determined, and the prospectivity of low-temperature storage is revealed.
