Methods of research - analytical, theoretical and experimental. Methods of mathematical modeling of food production processes and mathematical-statistical analysis were used for theoretical research, and summarizing the results of experiments and test the adequacy of the obtained mathematical models. The main hydrodynamic and mass transfer characteristics of vibroextraction process were determined by methods based on the regulations and laws of classical processes and apparatuses of food industry (theory and methods of prof. Lisiansky V.M., Akselrud G.A., theories of mass transfer, mixing fluids, turbulent jets, boundary layer, surface renewal of phase interaction, dissolution, etc.), by using advanced instrumentation. As a result of the work the scientific and technical problem of creating a scientific design base and improving of vibroextraction processes and apparatus design in food industry, which provides the ability to determine the rational design and technological parameters of vibroextractors and modes of their exploitation were solved. The relevance of scientific bases developing for regime and design parameters calculation rational methods of periodic and continuous processes of vibroextraction from vegetable raw materials in the food and other industries was substantiated. The methodological system of mathematical modeling of vibroextraction, methods of experimental evaluation of mass transfer efficiency and the structure of hydrodynamic flows, based on the phenomena of non-stationary mass transfer and hydrodynamics were developed. Implementation of the results allowed developing of vibrationextraction engineering calculation methods in the food industry, high-performance energy-saving vibrationextractors of periodic and continuous action for solid-liquid system with low density difference of phases and based thereon develop apparatus- technological schemes of rational deep processing of vegetable raw materials for a range of industries with their economic justification.
