The subject of the research is: products of recycling of fruit and vegetable, berry, grain materials and nuts; apparatus for concentration and IR-drying plant raw materials; modes of work of apparatus for processing vegetable raw materials: ІR-drying, microwave treatment under vacuum, a vacuum evaporator, the vacuum vibration dryer; processes of concentration, drying, crushing, extraction of experimental of plant raw materials; chemical composition, quality parameters and properties of products of processed fruit and vegetable, berry, grain materials and nuts; technological processes that occur during the production and storage of bread, pastry and culinary products with the addition of products of processing of vegetable raw materials; indicators of quality, food and biological value of the developed health foods.
