The influence of the size of hard particles and dry substances on structural-mechanical properties of DC, the impact of vibration on rheological properties of DC are experimentally investigated. The processing of food products with high viscosity is connected with the processes of flowing along the pipes, channels of blowers and forming machines. Therefore, the objective of investigating structural-mechanical properties of products with high viscosity is their improvement. The losses of pressure during the movement of dry confitures along the pipes and in local props are studied. The mechanics of DC movement during the manufacture is investigated, the dependences of DC shear stress on the velocity of shear are specified. Adhesive features of DC and their rheodynamics during the movement along the pipes that allowed obtaining data for calculating processes, apparatuses, machines and new equipment design. The construction of vacuum-evaporative apparatus with helical-screw scraper mixer is developed, and its efficiency is evaluated. Technological procedures for the manufacture of dry confitures "Berry" and "Apple" are elaborated.
