The object of the research is fresh and frozen wild-growing berries (large cranberries and cranberries), tomatoes (sweet pepper, tomatoes grown in different conditions), cultivated fungi (livewort, champignons, shiitake), frozen products of their processing (liquid phase and husks), made from them semi-finished and ready ptoducts. The subject of the research is consumer properties of frozen semi-finished products from berries, tomato vegetables, and cultivated fungi. Modern well-known and original methods are used for the solution of the defined tasks: organoleptic, physical (optical, spectrometric, cryoscopic), chemical, structural-mechanical, experimental, statistical, calculations, and methods of mathematical statistics with the use of MathCad 14. 1. Scientific novelty of the obtained results: 1. It is scientifically substantiated and experimentally proved that due to cyclic application of freezing and centrifugal action with the predetermined frequencies, husks stable to exfoliation and liquid phase from plant raw material are formed. 2. The complex of new data concerning organoleptic, physical-chemical properties and safety indicators of new products of processing from wild-growing berries, tomato vegetables and cultivated fungi is obtained; functional-technological properties of liquid phases and husks from cranberries, sweet pepper, tomatoes, cultivated livewort, champignons, shiitake, that allowed to substantiate the schemes of frozen semi-products manufacture and form the assortment of products with certain merchandising characteristics. 3. The technologies of producing ice-cream (frozen juice), frozen semi-finished product for tomato drinks, frozen semi-finished product from livewort with the addition of cornstarch. Semi-finished products of liquid phases, in particular from berries, can be used as raw material for the manufacture of such desserts as jelly, mousse, kissel. The research is performed in correspondence with main scientific directions of the researches in KhSUFT within the framework of target scientific-technical program "Biofortifiation and functional products based on plant raw material from 2012 to 2016" and the Concept of government policy in health nutrition of population. The area of application is food industry enterprises, catering business, and processing companies.
