The rational PMA quality, which is 7.5%, was scientifically substantiated. The set of new data about the PMA influence on physical and chemical consumer properties of meat emulsion products had been received on the base of conducted researches. It was proved that PMA addition increases water binding of systems. Expressed emulsifying and stabilizing effect of DBM was proved, which is a positive aspect of the product quality formation. A method for determination of calcium form in the meat emulsion food products, manufactured using the additive was proposed.
