Cryoscopic method based on differences in the chemical composition of the liquid phase isolated from poultry bred in a household and poultry. With cryoscopic methods were identified high molar mass solutes in the liquid phases of broiler meat. It was established that the average molar mass solutes in liquid phases isolated from broilers reared in conditions of the household, less on average - 45% than other samples. Low values of this index may be due to higher content of substances such as cryoprotectants, which include low molecular weight substances: inorganic (mineral components that are part of poultry feed, grown in terms of household) and organic (extractives, which cause more vibrant smako- aromatic characteristics of dishes and soup, cooked with poultry). As a result of themes developed and customized for the enterprise-customer methodology for assessing the quality of frozen poultry meat, which increases the level of expertise as raw materials of animal origin by reducing the time spent on the measurements, no need for technically sophisticated equipment and involvement of trained personnel for its service.
