The main task of work was to develop vitaminized carotenoid-containing baked rolls and biscuits with a high content of BAS obtained without the use of synthetical components, enriched with natural carotinoids, vitamines, natural colors, food flavors, structure stabilizers and other biologically active substanses for health-giving nutrition. As innovation during production of biscuits it was used natural herbal fine-dispersed additives of carotene-containing vegetables for vitaminization. These additives differ from analogues with a record content of BAS (5...10 times more then in additives made by traditional technologies). They have easy-digestible nanoform and at the same time double up as colors and texture stabilizers. Additives are heterogeneous fine-dispersed (nanostructural) biosystems in the form of suspensions, significant part of components of which are in ion-molecular form and another one - in colloidal condition.The goal of research - to prove scientifically and develop recipes and technologies of school baked rolls and biscuits enriched with carotenoid-containing additives of carrot and pumpkin for improving nutrition of schoolchildren and children of kindergartens, examine their quality, produce experimental samples on the department equipment , develop technological cards (for school baked rolls and biscuits). Recipes of 2 fortified baked rolls for students using fine-dispersed carotenoid-containing additives were developed as a result of experimental studies and mathematical modeling of data. Recipe of buns which differs from the usual baking with the fat-content 5% and sugar-content 56% was used as analogue. Dose and adding stage of additives in the technology of baked rolls were experimentally explained . The quality of new kinds of baked rolls was studied by organoleptic, physical-chemical parameters and BAS-content. Comparison with analogues was realised. It was shown that vitamin-containing baked rolls are high in carotene and vitamin C, for example 100 g of baked bun "Karotynka" contain 5.5 mg of carotene, covering the daily needs of human in carotene, and the bun "Oranzhon" - 4.2 mg per 100 g, which covers almost 90% of the daily needs of human in carotene, while in analogue it is absent. It is shown that the vitamin C content in 100 grams of enriched rolls is 43.5 ... 45.4 mg, corresponding to 0.5 daily human need for vitamin C. It is established that the new buns contain significant amount of low-molecular phenolic compounds - from 98.6 to 112.3 mg per 100 g, which are known as natural antioxidants, detoxicants and strengthen the blood vessels of human heart and brain. 3 recipes of biscuits enriched with carotenoid-containing additives were developed. It is shown that biscuits with the use of carotenoid-containing additives are high in carotene and vitamin C. For example, 100 grams of biscuits "Karotynka" contain 4.2 mg per 100 g carotene , which covers 80% of the daily human needs in carotene (daily requirement - 5 ... 6 mg) in biscuits "Vitaminka" - 3.9 mg per 100 g, which is 75% of daily needs, Biscuit "Svetliachok" - 3.6 mg per 100 g and 70% of the daily human needs. According to the norms recommended by FAO / WHO and Ministry of Health of Ukraine, these products due to BAS-content are related to fortified food and designed for immunization of the population. The results of the contractual issues. Regulatory documents (technological cards) were developed for the new recipes of baked rolls and biscuits and their production technology. Degustation of samples of conducted experimental benches of school baked rolls and biscuits enriched with carotenoid-containing additives of carrot and pumpkin was realised on the base of Public utility companny "Baby Food Combine" with the further goal to implement them to Public utility company "Baby Food Combine" (Kharkov).
