The purpose was to determine the biochemical and physiological criteria of embryonic development assessment for the regulation of poultry egg incubation process. Methods of the study were physiological, physical, biochemical, zoo technical, embryological, statistical. The technology of hen egg incubation on the basis of eggshell temperature parameters as a criterion for the physiological regulation of embryonic development was worked out. A new guideline for poultry egg incubation was issued. While conducting research the morphological and biological characteristics of eggs from egg and meat-and-egg hens were studied, it was found that the high content of egg yolk lipids caused the deterioration in output of chickens when applying the standard mode of incubation; the fatty acid composition of yolk lipids, the dynamic of yolk fatty acids utilization by chicken embryos during incubation were studied and its connection with the main events of embryogenesis established; the necessity of correcting the incubation temperature mode depending on the original content of lipids in the egg yolk was proved; the norms of the eggshell temperature during incubation process were established, incubation of the eggs from meat-and- egg hens according to predetermined standards led to the increase in egg hatchability by 8.0% compared with the control - 94,0 ± 1,8% and 86,0 ± 2,6%, (P <0.05); air standards parameters and modes of hen egg incubation were worked out, it was determined that for eggs from meat- and-egg hens the optimal parameters from 12 to 18 day incubation were - air velocity - 1,6-1,9 m / s, air multiplicity during 1 hour - 12-16 times. The results of the study were introduced on 11 thousand of hatching eggs from hens of different strains. The economic effect was 108 USD (for eggs from egg hens), 270 USD, (for eggs from meat-and-egg hens) per 1000 eggs laid in the incubation.
