Purpose - to explore the formation of meat efficiency genotypes of Southern Meat breed in terms of organic production and to prove economic expediency, economic efficiency and environmental safety of beef production in organic terms. Methods: breeding-genetic, population genetic, agrochemical, zoochemical,statistical analysis of the results by the methods of variation statistics. The basic methodological position, the selection and techniques of breeding of the cattle Southern Meat breed in the conditions of organic production in accordance with the regulations and decisions of the European Council "On organic production and labeling of organic products" were developed.
