The purpose of work - on the basis of a systematic approach and methodology of assessing risks to develop the recommendations for harmonization and adaptation of requirements for control system of canned meat in the State Reserve Agency of Ukraine. Research methods: search and analysis, process and system approach, general scientific logical methods (analysis, synthesis, generalization). Theoretical and practical results: the international requirements have been analyzed concerning the risks assessment of canned meat; has been held analysis of the existing in Ukraine control system of canned meat; examined and summarized the factors that affect the ability of long-term storage; the criteria for additional control in the State Reserve Agency of Ukraine have been determined.
