The modified hydrodynamic model of parabolic viscous turbulence distribution outside laminar sublayer has been proposed, which led to the development of the liquid film heat transfer coefficient calculational methods within a rang of the evaporation form the interface. The boundaries of heat transfer modes during evaporation from the free surface and boiling in the water and sugar solutions films have been defined. The empirical correlation which allows to calculate heat transfer to the films of water and sugar solutions are proposed, valid in all heat transfer modes, applicable in a vide range of pressure, vacuum and liquid film viscosity. The correlation for the determination of interfacial friction in the downstream film flows of water and sugar solutions at low pressure and vacuum was developed. It is valid for adiabatic and diabatic flows in the pipes of different diameters. These correlations form a basis for the sizing and rating calculations of industrial film evaporators for sugar and chemical industries.
