Technologies of such functional ingredients: beta-glucan concentrate from barley, synbiotic dietary supplement, beta-glucan from baker's yeast, complex of mushroom polysaccharides with iron, functional ingredient with adaptogenic activity, functional ingredient with antilipolytic activity were developed. Technologies for new canned products based on apple and tomato and apple puree with activated gelling functional properties were developed. Conditions of the key operations were optimized. Normative documentations for functional ingredients and products were elaborated. Industrial testing technologies was conducted. The physiological activities of five functional ingredients were proved by biomedical research. Elaborate functional ingredients and products have no analogues in Ukraine.
