The objective is to increase the efficiency of the use of non-traditional grain raw materials through its processing in the grain products and animal feed. Experimental studies were carried out on the basis of modern technology with the use of operating on the territory of Ukraine standards. For research used experimental base technology departments of grain processing, animal feed and biofuel technology, department of safety expertise and merchandising, grain storage technology, biochemistry, microbiology, physiology and nutrition, potable water technology, research laboratory Odessa National Academy of Food Technologies, the laboratory of the genetic basis of breeding SGI UAAN, biochemical laboratory of breeding SGI UAAN (Odesa), Dental Institute of the Academy of Medical Sciences of Ukraine, and the state institution "Institute of Eye Diseases and Tissue Therapy. V.P. Filatova AMS of Ukraine" (Odesa), Physico-chemical Institute of A.V. Bogatsky (Odesa), Institute of Biochemistry of A.V. Palladin of NASU (Kiev), M.G. Kholodny Institute of botany, NAS of Ukraine (Kiev), Ukrainian research institute of alcohol and biotechnology of foods (Kiev), PE "Agrochemical laboratory" (Odesa), State Sanitary and Epidemiological Service of Ukraine in Odesa Region. Polishing regimes and regimes of water heat treatment and their influence on the yield and quality properties of the polished and flaked kernel were investigated. The possibility of using polished and flaked kernel of naked oats and hull-less barley for the production of grain products with functional purpose were found. The technological line of processing naked oats and hull-less barley into mixture groats was developed. The technology provides an initial grain processing of naked oats and hull-less barley separately in two streams for cleaning and polishing then polished groat enters the mixer where spend the initial formation of the mixture in a predetermined a mass ratio of oats:barley. The formed mixture is fed to steaming, cooling and drying. Scientific substantiation of consumer properties of new cereal products when developing of prescription composition, conducted a comprehensive merchandising evaluation of bread with desired properties for the mass and prophylactic nutrition, recipes of which are formed with the use vegetable food supplements of domestic production, identified regularities of concentration of additives to the main biopolymers raw material - starch and protein. Technology of production of bread from whole wheat grain with the inclusion of root vegetables was developed. Technological process of production bread based on whole wheat grains with the inclusion of root vegetables provides for the use of standard equipment for the production of bread. The proportion of inclusion root vegetables in the formulation which contributes to prolonging acceptable quality indicators (organoleptic, physical-chemical, microbiological properties) of bread amounts to 10 % significantly slowing the staling process and desiccation. Identified sediment quality indicators after enzymatic hydrolysis of barley and developed a technological the method of its processing into extrusion feed additive, established modes of conducting the process of extrusion process to produce extruded feed additive. The effect of extrusion process on physical properties, chemical composition and sanitary quality extruded feed additive were found. Technology for production of functional mixed fodders for young poultry was developed. The technology of production of functional feed for young poultry which provides enrichment fodder with extruded feed additive based on the residue after enzymatic hydrolysis of barley and corn and withdrawal from the mixed fodder dried components - methionine and enzyme and enrichment of potable water with liquid agents - methionine and enzyme and probiotic as a mixture of cultures B. subtilis, B. licheniformis and joint use of function-enriched mixed fodder and drinking water as part of a unified feed environments.
