Purpose - to estimate the effectiveness of the method of alkaline neutralization of fat in the system of selective solvents for the removal of fat oxidation products. Research methods. According to standard procedures studied physico-chemical and organoleptic properties of the neutralized fat, conducted a trial to neutralize fat. The content of oxidation products in the oils and fats are defined according to DSTU ISO 3960-2001 and 6885-2002. Model fat samples with different content of oxidation products created on the accelerated method of "active oxygen". For the experimental design and data processing applied mathematical methods using the software package Statistica, Mathcad, Matlab and Misrosoft Excel. It has been determined that neutralization of fats in water-glycerol-ethanol system allows for a 30-33% lower fat content in the neutralized secondary oxidation products, which helps to improve the quality and safety of products.
