The object of the study is the technology of disperse systems using surfactants and wheat starch. The subjects of the study are disperse systems, surfactants, wheat starch, model systems based on wheat starch and surfactants. The methods of research are analytical, physical, physical and chemical and methods of mathematical processing. The theoretical aspects of the preparation of disperse systems have been studied. On the basis of analytical studies, laboratory and production workings using the methods of system analysis, the technologies of disperse systems with the use of surfactants and wheat starch are substantiated and developed. The rational relations of the formulation components of food products on the basis of disperse systems using surfactants and wheat starch are determined, which is characterized by stable organoleptic parameters in time, due to the realization of the functional properties of wheat starch. In production conditions, the formulation and technological process of production of mousses (fruit and vegetable) on the basis of disperse systems using surfactants and wheat starch were tested.
