The received products differ from their analogues by a high degree of safety of nutritive and biological value of raw materials. Based on the performed researches, the authors developed innovative technologies of bakery and pastry products for health improvement using new products in the result of processing plant material (pastes and powders from raw fruits and vegetables, powdered grape pomace, extraction cake of oat germs and wheat, corn germ cake, spelt wheat, extraction cake of walnut and pine nuts). The developed technologies differ from their analogues by high content of fiber, minerals, vitamins, some minor components (phenolic compounds). Technologies of bakery products differ from their analogues by the reduced production cycle due to the intensification of products' quality formation in the absence of any nutritional additives.
