An analysis of the biochemical composition of viburnums and cranberries has been carried out. The methods of their processing with the obtaining of powders and frozen puree have been developed. The biochemical composition and physical and chemical properties of the obtained natural enrichers are determined. The technologies of obtaining healthу foods with the use of established enrichers are developed - the technology of yoghurts enriched with powder or puree of cranberries, as well as the technology of cupcakes enriched with viburnum powder, as well as frozen puree with stevia extract. Physicochemical and microbiological parameters of the developed products are determined. The calculation method determines the content of the main nutrients and the level of maintenance of their daily needs, which allowed to consider the developed products as functional food category.
