It was established that the raw milk, which is sold in the markets, S. aureus stood at 84.7% of the samples, and coming in dairy plants - 100% of the samples. In samples of cheese dairy markets in S. aureus stood at 19.8% of the investigated samples, and the cream of harvested domestic production - in 92% of samples. Revealed that L. monocytogenes bacteria isolated from samples of carcasses 6.2% beef, 15% pork carcasses samples and 5.5% of samples of chicken carcasses. In the semi-finished meat quantity allocation bacteria L. monocytogenes grew in 1.9 - 2.8 times, indicating that contact with environmental objects during its processing.
