It was found that the use of ammonium sulfate to obtain the enzyme preparation of milk-action increases the degree of purification by 2.56 times. The additional use of salting-out, dialysis and freeze-drying method can increase the degree of purification of the enzyme preparation by 3.2 times. Study of enzyme preparations (EP) showed that their milk-clotting activity not dependent on the protein content and varies widely. The optimal terms of cultivation GD-1 Grifola frondosa strain for bioutilizatsii or bioconversion of lignocellulosic substrate were determined. The cultivation period for the fungal mycelium preparation is 9-15 days and for commercial fruiting bodies is 25-35 days. The growth performance and productivity of the genus Pleurotus strains when cultivated on lignocellulosic waste were determined.
