The purpose of work - scientific substantiation of intensification of mass transfer processes on the example of salting fish raw material process. It was systematized information on how to pickle fish raw material, current methods of an intensification of the process of salting, as well as the corresponding hardware design. Intensification of production processes, as well as solutions of energy problems and resources in a variety of industries in recent years has become increasingly important. One of the most effective ways to achieve high results in the process of mass transfer processes are pulsed energy effects on work medium in the processing of liquid heterogeneous systems. Perspective direction of intensifying the process of salting fish is the use of ultrasonic treatment. However, studies of its impact on the kinetics of the pickling process in Ukraine are limited, which raises the need for additional research in this area.
