Within the framework of the research work, the examination of normative documents regulating the requirements for the quality and safety of the main and auxiliary raw materials was carried out. An assortment of new products was developed, requirements for organoleptic parameters were formulated, physico-chemical, microbiological, toxicological indicators were determined; Selection of packaging materials; Recommendations for use have been developed, conditions and shelf life have been substantiated. According to the results of the research, a draft normative document has been developed - technical specifications for pasta products of quick preparation.
