The aim of the study is to develop the resource-saving technologies of multifunctional dry fish and plant semi-finished products and food products with their use for military persons in the extreme conditions. There were determined the directions of technological use of protein-based domestic fish, dairy, plant raw materials in the production of special food products. On the basis of the justification of the conceptual principles of nutrition correction in the extreme conditions, the technologies of food products with the use of dry multifunctional protein-carbohydrate semi-finished products have been developed. It is proved that the developed semi-finished products have high nutritional value, high bioavailability of proteins, and products with their content have high consumer and qualitative indicators, the ability to quickly recover in the liquid systems, the possibility of prolonged storage, the creation of a food reserve. There were developed the recommendations on the use of products for nutritional support of wounded and sick military persons during the stages of medical evacuation, the efficiency of which has been proved in the conditions of the clinical basis of the Ukrainian Military Medical Academy.
