Purpose of scientific and experimental substantiation of methods of biological activation of grain of cereal crops; substantiation of feasibility of using biologically activated grain for the production of health food products. Scientifically grounded and experimentally investigated the method of application of prolonged intensive low-temperature hydrothermal grain processing, which contributes to its biological activation - germination, to increase the nutritional value of raw materials, in particular, a significant increase in the content of water-soluble and fat-soluble vitamins. A method of using biologically activated grain for the production of a glazed bar, health improving purpose was developed. Scientifically grounded and experimentally investigated the method of obtaining high-mineralized grain material and its application for the production of functional food products. The proposed methods of grain processing can be used at grain processing enterprises for the purpose of preliminary preparation of grain for the production of health-improving, functional food products.
