Object of research: sunflower oil refined deodorized brand "P" according to DSTU 4492: 2005 "Sunflower oil. Specifications", packed in a container of polymer materials in the volume of 5000 cm3. The purpose of the work: to scientifically substantiate the possibilities of expanding boundaries of temperature limits while storing sunflower oil to reduce the cost of long-term storage of products in warehouses. Research results: an analytical review of literature on the production of sunflower oil in Ukraine has been carried out. The experimental part was carried out, as the temperature conditions of sunflower oil storage were formed, as well as the main quality indicators for long-term storage. On the basis of these studies, a draft "Instructions on the order and terms of supply, storage and release of sunflower oil" has been developed and amendments to the Oil Reception, Storage and Discharge Procedure are being prepared. Taking into account the results of research, by definition and substantiation of the shelf life for refined deodorized frozen branded "P" packaged, which is stored in the warehouse in closed darkened rooms. The recommended relative humidity should be no more than 75%, with constant circulation of air. The storage temperature of the packed oil is the ambient temperature and may be minuscule for the cold season. With this storage mode, the oxidation processes are slowed down, the oil becomes cloudy and its viscosity increases. After heating, such oil quickly changes to the previous state - it becomes transparent, therefore such a cloudiness is not a sign of a marriage. (This does not lead to qualitative changes in the product), but for warm period of the year storage in such premises is recommended to maintain no more than plus 30 C.
