Subject of research - physico-chemical and technological indices of test fat of the initial and after interesterification in the presence of alkaline metal glycerates. The purpose of the work is the development and experimental confirmation of the efficiency of the new catalyst for the interesterification of oils and fats based on alkali metal glycerates. Methods of study: fatty acid and triacylglycerol composition of test fat determined using chromatographic analysis; the characteristics of melting and crystallization, as well as the content of solid triacylglycerols of test fat determined using differential scanning calorimetry; the physical and chemical parameters of the experimental oils are determined according to standard methods. The scientific data on the efficiency of new catalysts for the interesterification of oils and fats based on alkali metal glycerates have been obtained. The physical and chemical parameters of test fat in the initial form and after interesterification with potassium glycerate and sodium glycerate were analyzed.
