Subject of research - raw materials and products of the food industry in terms of smart packaging, nanocomposites, natural extracts and antioxidants. The purpose of the work is to develop new and improve existing technologies using smart packaging, active packaging elements, nanocomposites, natural extracts and antioxidants. The fundamental problem addressed by the project is a comprehensive study of the effect of smart packaging on the storage of food products, their influence on chemical and technological and qualitative indicators, in order to implement original ideas, new methods of extending their storage life. Tasks for which the project was directed: - to conduct a comprehensive analysis, to substantiate and assess the efficiency of using smart packaging, nanocomposites, natural extracts and antioxidants in food production and storage technologies; - to investigate the influence of smart packaging, active packaging nanocomposites, natural extracts and antioxidants on the change of chemical and technological and qualitative indices of food products; - to select the characteristics of smart packaging with active packaging elements with stable packaging properties in the technologies of canning and extending the shelf life using active packaging in the food industry; - to investigate the influence of smart packaging on qualitative, chemical and technological indicators of food products.
