The subject of research - the innovative process of extraction of biologically active substances (BAR) from grape excrements (BB) subcritical water (SKV). Object of research - BB; rational parameters of the extraction process; Physico-chemical and biological properties of the extract obtained: dry matter, antioxidant activity, polyphenols (tannin-catechin complex), furfural, reducing the substances of gal and tartaric acid. The purpose of the work is the development of scientific bases and theoretical substantiation of the innovative process of extraction of BAR with VV SQV; experimental confirmation of the reliability of the theoretical positions. Research methods - development of the model of the extraction process of SQVVV taking into account the heterogeneity of their structure, structure and biological value of each of the components of the BB (crests, skin, stones, remnants of pulp). The mathematical model of the extraction process of VV SKV using the hydrodynamic module FLOTRAN of the ANSYS system is proposed. The scientific hypothesis of complex on the selective extraction has been experimentally confirmed. BAR SQV: variation of the parameters of the extraction process SQV allows obtaining extracts of VB with a maximum content of a given target product, or an extract, which presents the BAR complex, available in the raw material used in the extraction process and whose content may vary based on the process parameters. The rational parameters of the extraction process (temperature, pressure, hydromodule), which provide the maximum output of the target product to be studied, are established.
