Biotypes are distinguished from raw milk and dairy products entering into free markets. hominis and var. bovis Human biotype was isolated from raw milk in 53.4% of cases, sour cream - 64.3%, and from cottage cheese - 91.5%. Of the two biotypes, type A enetrotoxin produced only S. aureus var. hominis in 38.9% of cases, and enterotoxins C and D produced S. aureus var. bovis at 25.0%. It was found that non-compliance with sanitary standards at slaughter points leads to contamination of the surface of carcass of beef and pork with shrimp producing E. coli. For the rapid identification of the pathogenic forms of L. monocytogenes from non-pathogenic species, one can restrict itself to determining the sugorlithic properties of xylose, rhamnose, mannitol and lactose.
