The existing technological equipment for heat treatment of this raw material in most cases is low-effective and resource-consuming In connection with this, there is a need to develop recommendations on the manufacture of multicomponent fruit and berry pastes and dried semi-finished products of high quality and attractive color. Also the study of the influence of the percentage content of each impurity in multicomponent compositions on the resulting structure of the product and its color. This is possible only due to studying heat-mass-exchange processes of the concentration and drying of fruit and berry raw materials in multicomponent compositions and due to the analysis of differential function of pore distribution by radii in puree and paste-like semi-finished products. In the research we used: fruit-berry raw materials, devices for its concentration and infrared drying. Interaction of the components in multicomponent compositions was investigated by analyzing differential function of pore distribution by radii in the received compositions. Spectral-optical analysis was used to determine BAS preservation and study color characteristics of multicomponent raw materials during heat treatment. The use of the recommended conditions will ensure the manufacture of natural multicomponent paste-like and powdered fruit-and-berry semi-finished products of the guaranteed quality with therapeutic and prophylactic properties and color attractive for the consumer.
