The work objective is to develop of nanotechnologies of fine-dispersed additives in the form of puree and powders in nanoscale form with using as innovation a complex action on raw materials of steam-thermal treatment and non-enzymatic catalysys with mechanical grinding. The methods of researches - both conventional and special original chemical, biochemical, spectroscopic, microscopic, physicochemical, chromatographic methods of investigation were used. It is established that under the influence of these processes, activation of pectin substances, inulin, protein and BAR occurs, more complete removal of them from the raw material into a soluble easily digestible form (in 4.5…7.3 times) from the hidden form. On the basis of the research carried out, nanotechnologies of additives in the form of nanopowders and nanopowders, draft regulatory documents and experimental batches produced in production conditions have been developed.
