It is shown that pasteurization is an effective method of providing of biological firmness of beer. Researches of physical and chemical indexes of the unpasteurized and pasteurized beer showed after 6 months of storage, that the unpasteurized beer had lost the properties, dimness appeared, the size of bitter taste diminished considerably, while in the pasteurized beer this index diminished only on 1,2 units. The pasteurized beer possesses the best biological firmness, higher value of hop bitter taste. Beer in glass bottles and рolyethylene bottles did not almost differ on the indexes of quality.
